When playing from the rough, always open the clubface at address. That way you at least partially counter the closing of the clubface through impact caused by the grass wrapping around the hosel.
Also, using plenty of wrist action to steepen the swing helps to reduce the amount of grass coming between the clubface and ball.
Finally, holding the club firmly in the left hand will help the clubface from closing.
